Description

These double chocolate brownie cookies are the perfect blend of a chewy brownie meets crispy chocolate cookie with melted chocolate bits.


Ingredients

  • 315 gr dark chocolate, finely chopped

  • 1/4 cup unsalted butter

  • 1 1/4 cup light brown sugar

  • 1 tsp vanilla

  • 2 eggs

  • 1/2 tsp baking powder

  • 1/4 tsp kosher salt

  • 2/3 cup all purpose flour

  • 2/3 cup powdered sugar

  • 1 tbsp dark cocoa powder


Instructions

  1. Preheat the oven to 350F. Line a baking sheet with parchment paper.

  2. In a small saucepan over low heat, melt the butter and 300gr of chocolate, stirring until smooth. Set aside.

  3. In the bowl of a stand mixer with the whisk attachment, whisk the eggs, brown sugar and vanilla until creamy, about 5 minutes

  4. In a separate bowl, sift the flour, powdered sugar, baking powder and cocoa powder. And add to the egg mixture, stir until combined. Folding in the melted chocolate mixture.

  5. Chill for 15 minutes.

  6. With a small cookie or spoon, spoon dough onto prepared sheet. Slightly flatten the tops by pressing down with your fingers. I like to add the remaining chopped chocolate (15gr) on top.

  7. Bake for 10-12minutes, until the tops crackle. Allow to cool completely
