Description
These double chocolate brownie cookies are the perfect blend of a chewy brownie meets crispy chocolate cookie with melted chocolate bits.
Ingredients
-
315 gr dark chocolate, finely chopped
-
1/4 cup unsalted butter
-
1 1/4 cup light brown sugar
-
1 tsp vanilla
-
2 eggs
-
1/2 tsp baking powder
-
1/4 tsp kosher salt
-
2/3 cup all purpose flour
-
2/3 cup powdered sugar
-
1 tbsp dark cocoa powder
Instructions
-
Preheat the oven to 350F. Line a baking sheet with parchment paper.
-
In a small saucepan over low heat, melt the butter and 300gr of chocolate, stirring until smooth. Set aside.
-
In the bowl of a stand mixer with the whisk attachment, whisk the eggs, brown sugar and vanilla until creamy, about 5 minutes
-
In a separate bowl, sift the flour, powdered sugar, baking powder and cocoa powder. And add to the egg mixture, stir until combined. Folding in the melted chocolate mixture.
-
Chill for 15 minutes.
-
With a small cookie or spoon, spoon dough onto prepared sheet. Slightly flatten the tops by pressing down with your fingers. I like to add the remaining chopped chocolate (15gr) on top.
-
Bake for 10-12minutes, until the tops crackle. Allow to cool completely
