Fudgiest Olive Oil Brownies

Description

The fudgiest olive oil brownies you’ll over make! 


Ingredients

  • ¼ cup + 2 tablespoons Olive Oil  / 100gr or 110 ml (good quality) 

  • 1 ½ cups semi-sweet chopped chocolate / 250gr

  • 4 eggs / 200gr approx.

  • 1 teaspoon vanilla extract / 4gr

  • 2 cups granulated sugar* / 400gr

  • ¼ cup + 1 tablespoon of cocoa powder / 33gr

  • ¼ cup + 2 tablespoons of all purpose flour / 40gr

  • 1 teaspoon of salt


Instructions

  1. Preheat the oven to 220ºF. Line an 8×8-inch pan with parchment paper.

  2. Melt the chocolate in a double broiler over low heat, stirring until it is completely melted. Remove from heat.

  3. Add the olive oil to the melted chocolate and fold using a spatula until fully incorporated. Set aside while it cools. 

  4. In a bowl of the electric mixer, beat the eggs and sugar until the mixture has doubled in size and has a pale yellow color. Add the vanilla and continue beating. 

  5. Add the melted chocolate and beat until combined.

  6. Add the flour, cocoa powder and salt; keep beating until fully incorporated.

  7. Increase the oven temperature to 250ºF. Pour the batter into the prepared pan and bake for 65 minutes (see notes), or until you see a crinkle top and toothpick comes out mostly clean (it won’t look fully baked because they’re very fudgy).

  8. Cool completely before cutting into squares. Enjoy!

* You can reduce the amount of sugar no more than 30% without affecting the recipe.

** If you make ingredient substitutions, this recipe won’t work.
