Description
This easy passion fruit granita with chia pudding is perfect summer snack! It’s also vegan, gluten free and refined sugar free, and absolutely delicious.
Ingredients
For the chia pudding:
- 1/2 cup chia seeds
- 1 3/4 cups nut milk
- 1 tbsp maple
For the granita
- 1 cup passion fruit pulp
- juice from 1 lime
- 1 1/2 cup water
- 1/2 cup maple
- Condensed milk for topping, optional
Instructions
For the chia pudding:
- Stir all ingredients in a bowl until combined. Leave for 15-30 min to thicken up, stirring a couple of times until it sets evenly. ⠀⠀
For the Passion Fruit Granita:
- In a medium saucepan over medium-low heat, combine all ingredients and whisk until it thickens a bit. Transfer to a square metal pan, allow to cool and freeze for at least 4 hours. Scrape with a fork into flaky crystals. ⠀⠀⠀
Assemble:
- Add 1/2 cup of chia pudding and top with 1/4 cup of passion fruit granita.
- Optional: top with condensed milk. YUM!
