1 1/2cupsgluten free flour
1/4cupgranulated sugar
1/2cuplight brown sugar
3/4tspbaking soda
1/4tspbaking powder
1/2cupcocoa powder
1/2tspcinnamon
1/2tspsea salt
3ripe bananasmashed
2bananassliced in half lengthwise, for topping, optional
2organic eggs
2tspvanilla extract
1/2cupoilI used canola
1cupsemisweet dairy free and gluten free chocolate chips
Topping:
1cupwhipped greek style nut yogurt

Instructions
Preheat the oven to 350F. Grease 10 inch skillet with cooking spray.
In a large bowl, whisk together the dry ingredients: flour, sugar, brown sugar, baking soda, baking powder, cocoa powder, cinnamon and salt.
In a separate bowl, combine the 3 mashed bananas, eggs, vanilla extract and oil. Whisk until fully incorporated.
Combine wet and dry ingredients using a spatula or wooden spoon. Fold in the chocolate chips and transfer to skillet.
Place the sliced bananas over the top, if using.
Bake for 28 minutes, until toothpick comes out mostly clean. Some melted chocolate is ok.
Serve warm!
Topping:
This recipe is also delicious with some whipped almond yogurt (greek style) and honey. Totally optional! Also, vegan vanilla ice cream works, too!
