Fluffy Chocolate Chip Pancakes

Nothing better than waking up to a stack of fluffy chocolate chip pancakes any day of the week! Top them with fresh whipped cream and more chocolate chips.

Ingredients

  • 1 1/2 cups all purpose flour
  • 6 tbsp granulated sugar
  • 2 tbsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs
  • 1 cup yogurt
  • 2 tsp vanilla extract
  • 1/3 butter melted and cooled, plus more for greasing
  • 1 cup chocolate chips
  • Whipped cream for serving optional

Instructions

  • In a large bowl, combine the dry ingredients; flour, sugar, baking soda, baking powder and salt.
  • In a separate bowl, add the eggs and whisk. Add melted and cooled butter, yogurt and vanilla, and mix until well combined.
  • Pour the wet mixture into the dry mixture bowl and stir to combine. Fold in the chocolate chips and gently stir until combined. Don't over mix.
  • Cover with plastic wrap and allow the batter to rest for 30-45 minutes before cooking.
  • Pour 1/2 cup of batter into greased 8-inch non-stick pan. Cook for 4 minutes or until bubbles start forming, and then flip over. Cook for another 2-3 minutes. Repeat until all batter has been used.
  • Serve warm and top with fresh whipped cream, maple syrup and extra chocolate chips.
