Deliciously creamy and secretly healthy chocolate mousse. This easy recipe comes together in 5 minutes and it's vegan and gluten, dairy and sugar free!

Ingredients
2cupsnon-dairy greek yogurt
1/2cupalmond butteror preferred nut butter
6ozdark chocolatemelted
1tspcoconut oil
4tbspmaple syrupif using unsweetened yogurt
1/2tspvanilla extract
Topping:
1/2can coconut creamchilled
Chopped nutsI used pistachios
Cocoa nibs
Instructions
In a heatproof bowl, combine dark chocolate and coconut oil. Microwave at 30 seconds intervals, whisking in between, until completely melted. Allow to cool slightly.
In a separate bowl, whisk yogurt and nut butter until smooth.
Fold the melted chocolate into the yogurt-nut butter mixture using a spatula. Stir in vanilla and maple syrup (if using).
Spoon the chocolate mousse into 2 serving cups.
For the Whipped Coconut Cream:
In the bowl of a stand mixer, fitted with the whisk attachment, whisk chilled coconut cream until smooth. Add a splash of maple syrup if desired. Refrigerate until ready to serve.
Assemble your Chocolate Mousse:
Spoon the chocolate mousse into 2 serving cups.
Top with a dollop of whipped coconut cream.
Sprinkle chopped nuts (I used pistachios), cocoa nibs or your preferred nuts and seeds.
