Passion Fruit Granita Chia Pudding

This easy passion fruit granita with chia pudding is perfect summer snack! It's also vegan, gluten free and refined sugar free, and absolutely delicious.

Ingredients

For the chia pudding:

  • 1/2 cup chia seeds
  • 1 3/4 cups nut milk
  • 1 tbsp maple
  • For the granita
  • 1 cup passion fruit pulp
  • juice from 1 lime
  • 1 1/2 cup water
  • 1/2 cup maple
  • Condensed milk for topping optional

Instructions

For the chia pudding:

  • Stir all ingredients in a bowl until combined. Leave for 15-30 min to thicken up, stirring a couple of times until it sets evenly. ⠀⠀

For the Passion Fruit Granita:

  • In a medium saucepan over medium-low heat, combine all ingredients and whisk until it thickens a bit. Transfer to a square metal pan, allow to cool and freeze for at least 4 hours. Scrape with a fork into flaky crystals. ⠀⠀⠀

Assemble:

  • Add 1/2 cup of chia pudding and top with 1/4 cup of passion fruit granita.
  • Optional: top with condensed milk. YUM!
