This easy passion fruit granita with chia pudding is perfect summer snack! It's also vegan, gluten free and refined sugar free, and absolutely delicious.

Ingredients
For the chia pudding:
1/2cupchia seeds
1 3/4cupsnut milk
1tbspmaple
For the granita
1cuppassion fruit pulp
juice from 1 lime
1 1/2cupwater
1/2cupmaple
Condensed milk for toppingoptional
Instructions
For the chia pudding:
Stir all ingredients in a bowl until combined. Leave for 15-30 min to thicken up, stirring a couple of times until it sets evenly. ⠀⠀
For the Passion Fruit Granita:
In a medium saucepan over medium-low heat, combine all ingredients and whisk until it thickens a bit. Transfer to a square metal pan, allow to cool and freeze for at least 4 hours. Scrape with a fork into flaky crystals. ⠀⠀⠀
Assemble:
Add 1/2 cup of chia pudding and top with 1/4 cup of passion fruit granita.
