Wet Ingredients
- 3 eggs
- 1 can organic pumpkin puree
- 4 tbsp unsalted butter melted
- 2 tbsp vanilla
- 3 tbsp nut milk
Dry Ingredients
- 2 cups gluten free flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 1/2 tsp pumpkin spice
- 1/4 tsp cardamom
- 1 tsp salt
Cinnamon Sugar Topping (optional)
- 1 cup sugar
- 2 tbsp cinnamon
Preheat the oven to 325F and lightly grease a donut pan.
In a large bowl, combine dry ingredients: flour, sugar, brown sugar, pumpkin spice, cardamom, baking powder, baking powder and salt
Add the wet ingredients into the dry ingredients and mix by hand until combined. Batter will be thick.
Add the mixture to a large piping bag and pipe the batter into the donut pan.
Bake for 10-12 minutes until the dough springs back when touched.
Remove from oven and allow to cool in the pan for 5 minutes. Transfer to a cooling rack and bake the remaining batter.
Brush the donut with melted butter and dip both sides into the cinnamon and sugar mixture.
Serve with coffee or tea and enjoy!
