Truffle Brownies

Deliciously decadent Truffle Brownies with a rich ganache topping, a fudgey chocolatey base and toasted hazelnuts. The perfect recipe to elevate your homemade brownies.

Ingredients

For the Brownies:

  • 6 oz bittersweet chocolate chopped
  • 10 tbsp unsalted butter
  • 1 cup granulated sugar
  • 1/3 cup brown sugar
  • 3 eggs + 1 yolk
  • 1 tbsp vanilla extract yes tbsp!
  • 1/4 tsp salt
  • 1 1/4 cup all purpose flour unbleached
  • 1 cup hazelnuts chopped and toasted
  • 1/2 cup semisweet chocolate chips optional
  • For the Ganache
  • 3/4 cup heavy cream
  • 6 oz bittersweet chocolate chopped
  • 1/4 cup dark chocolate chips

Instructions

  • For the Brownies
  • Preheat the oven to 350F. Lightly grease and line an 9x9 pan with parchment paper.
  • In a medium saucepan over medium heat, melt the butter. Add chocolate and whisk until fully melted. You can do this using a double broiler if you prefer.
  • In a large bowl, whisk together the sugar, brown sugar, eggs + yolk, vanilla extract and salt.
  • Whisk in the chocolate mixture until fully incorporated. Fold in the flour, hazelnuts and chocolate chips.
  • Transfer batter to prepared pan, and cook for 30-35 minutes, or until toothpick inserted into center comes out with moist crumbs attached.
  • Allow to cool completely before adding the ganache on top.
  • For the ganache
  • In a medium pot, simmer heavy cream over medium heat. Don't let it come to a boil!
  • Remove from heat and add chopped chocolate and chocolate chips.
  • Let stand for 1 minute, then whisk until chocolate melts.
  • Pour over cooled brownies and let cool at room temperature for at least for hours.
