This refreshing Lemon Mojito is the perfect summer drink. Made with white rum, lemon juice, and fresh mint leaves, this cocktail is a delicious twist on the traditional Cuban classic.



For the Lemon Mojito:

  • 1 Darling Lemon®, halved and cut into fours
  • 67 Fresh mint leaves, plus more for garnishing
  • 2 oz (60ml) white rum, or 2 shots
  • 1 tbsp granulated sugar
  • 1 1/2 cups soda water, or sparkling
  • Crushed Ice
  • Lemons and mint leaves for garnish
  • 1 tall tumbler or Collins glass

For the Lemon Sugar:

  • Zest of 1 Lemon
  • 3/4 cup granulated sugar


For the Lemon Mojito:

  1. In a large tumbler, combine the halved and quartered lemon, fresh mint leaves and sugar. Using a muddler, firmly press down and twist a few times until lemon juice flows and mint is fragrant. Add the white rum shots, top with crushed ice.
  2. Using a large spoon, fold and combine the ingredients. Top with soda water and garnish with lemons and mint springs.

For the Lemon Sugar:

  1. To make the lemon sugar: combine the zest of 1 lemon, with 3/4 cups of sugar in a bowl. Rim your tumbler glasses in sugar.
