Description
This refreshing Lemon Mojito is the perfect summer drink. Made with white rum, lemon juice, and fresh mint leaves, this cocktail is a delicious twist on the traditional Cuban classic.
Ingredients
For the Lemon Mojito:
- 1 Darling Lemon®, halved and cut into fours
- 6–7 Fresh mint leaves, plus more for garnishing
- 2 oz (60ml) white rum, or 2 shots
- 1 tbsp granulated sugar
- 1 1/2 cups soda water, or sparkling
- Crushed Ice
- Lemons and mint leaves for garnish
- 1 tall tumbler or Collins glass
For the Lemon Sugar:
- Zest of 1 Lemon
- 3/4 cup granulated sugar
Instructions
For the Lemon Mojito:
- In a large tumbler, combine the halved and quartered lemon, fresh mint leaves and sugar. Using a muddler, firmly press down and twist a few times until lemon juice flows and mint is fragrant. Add the white rum shots, top with crushed ice.
- Using a large spoon, fold and combine the ingredients. Top with soda water and garnish with lemons and mint springs.
For the Lemon Sugar:
- To make the lemon sugar: combine the zest of 1 lemon, with 3/4 cups of sugar in a bowl. Rim your tumbler glasses in sugar.
