For the Chia Pudding:
- 2 cups Kefir, or preferred milk
- 1/2 cup chia seeds
- 4 tbsp kefir cup*
- 3–4 tbsp maple syrup
For the Raspberry Orange Compote:
- 3 cups raspberries
- Juice of 1 small orange, I used blood orange
- 6 tbsp maple syrup
For the Layers:
- Granola, store-bough or homemade
- More raspberries, for topping
- 1/4 cup chopped dark chocolate, for topping
Instructions
For the Chia Pudding:
- Simply combine 2 cups of Kefir (or preferred milk), 1/2 cup chia seeds, 4 tablespoons of kefir cup, 3-4 tablespoons of maple syrup. Mix well in a large bowl and let it sit on the counter for 15 minutes. It keeps well in the fridge for about 4 days.
For the Raspberry Orange Compote:
- Combine all the ingredients in a small pot, cooking over low heat for 10 minutes, until raspberries soften. Use a fork to mash the raspberries and cook for another 5 minutes until desired consistency. The texture should be thick but runny, like preserves. Set aside to cool.
Assemble:
- To layer your chia parfait start with 1/4 cup of granola, add a few tablespoons of chia pudding. followed by a couple of tablespoons of the raspberry compote. Top with a spoonful of kefir cup, fresh berries and sprinkle some chopped dark chocolate. Enjoy!
