I live for easy breakfast and snack ideas like this raspberry blood orange chia parfait. Sounds fancy but it’s super easy. I also like making them extra pretty because we all east with our eyes first.

For this parfait recipe, you’re going to need:

  • Granola, store-bought or homemade
  • Lifeway Kefir
  • Chia seeds
  • Raspberries and oranges
  • Kefir Cups
  • Dark Chocolate

What is Kefir?

Kefir is an amazing probiotic beverage that’s versatile and can be used to replace milk, buttermilk and yogurt in baked goods and smoothies.

For this recipe, I’m partnering with Lifeway Kefir because they are the best Kefir brand here in the US. I’ve been using their products since the beginning of 2019 and we love them. Lifeway Kefir is a tart and tangy cultured milk smoothie that is high in protein, calcium and vitamin D. Ways to use Kefir

How to make an easy chia parfait

A Chia Parfait is a fancy way to describe a layered chia pudding. I like mine packed with flavors, vibrant colors and texture. To make this Raspberry Blood Orange Chia Parfait you’re going to need the following:

  • Chia pudding
  • Raspberry Orange Compote
  • Granola
  • Kefir Cup for topping

How to make a chia pudding

My no fuss, no fail chia pudding recipe is creamy and lightly sweetened with maple syrup. And it only takes 15 minutes to make! Simply combine 2 cups of Kefir (or preferred milk), 1/2 cup chia seeds, 4 tablespoons of natural organic kefir cup, 3-4 tablespoons of maple syrup. Mix well in a large bowl and let it sit on the counter for 15 minutes. It keeps well in the fridge for about 4 days.

How to make a raspberry orange compote

To make a raspberry blood orange compote you’re going to need:

  • 3 cups raspberries, I prefer organic (don’t use frozen!)
  • Juice of 1 small orange
  • 6 tablespoons maple syrup

Cook all the ingredients in a small pot over low heat for 10 minutes until raspberries soften. Use a fork to mash the raspberries and cook for another 5 minutes until desired consistency. The texture should be thick but runny, like preserves. Set aside to cool.

How to layer a chia parfait

To layer a chia parfait you need a variety of textures. Start with granola or nut mix, top with a few tablespoons of chia pudding. Followed by a couple of tablespoons of the raspberry compote (or preserves). Top with a spoonful of kefir cup, fresh berries and chopped dark chocolate. Enjoy!

For the Chia Pudding:

  • 2 cups Kefir, or preferred milk
  • 1/2 cup chia seeds
  • 4 tbsp kefir cup*
  • 34 tbsp maple syrup

For the Raspberry Orange Compote:

  • 3 cups raspberries
  • Juice of 1 small orange, I used blood orange
  • 6 tbsp maple syrup

For the Layers:

  • Granola, store-bough or homemade
  • More raspberries, for topping
  • 1/4 cup chopped dark chocolate, for topping

Instructions

For the Chia Pudding:
