Summer is almost here and with it comes one of my all-time favorite treats – s’mores! Ever since I went to summer camp in North Carolina and was first introduced to this delicious treat (I was 9!), I’ve been obsessed with making it. Especially love making variations of traditional s’mores, because well we don’t always want (or can) have a fire pit in the middle of the week.

I teamed up with Lifeway Kefir to make this elevated childhood treat into something special. This S’mores Meringue Pie recipe is truly one of the best Yoga of Cooking desserts and hopefully it’ll, too, become a staple in your kitchen this summer!

What is Kefir?

Before we get started with the S’mores Meringue Pie recipe, you may be wondering what Kefir is and how to use it. Kefir is a tart and tangy cultured dairy drink packed with protein, calcium, and 12 live and active probiotic cultures. Here’s a great article with evidence based benefits!

Using kefir in baked goods is super simple. Simply replace 1 cup of milk for 1 cup of kefir and you’re good to go! I loved using it in this tart, but you can also use it to make my banana bread and chocolate chip muffins.

For this S’mores Meringue Pie recipe, I used Lifeway Chocolate Truffle Lowfat Kefir. What I love about it is that it is up to 99% lactose-free, gluten-free, and made with all natural, non-GMO ingredients.

How to make a S’mores Meringue Pie

Making a S’mores Meringue Pie is super easy and you’re only going to need a handful of ingredients. It has 3 layers, like traditional s’mores do.

  • Layer 1: graham cracker crust. Made with graham crackers, melted butter, and a pinch of salt. Or you can use a store-bought graham cracker crust!
  • Layer 3: a marshmallowy meringue topping. Made with egg whites, sugar, cream of tartar, water and vanilla.

How to make a graham cracker crust

First, we’re going to start with the base. You’re going to need about 27 graham crackers and 1 stick of butter, melted. Place the graham cracker in a food processor and pulse until finely crumbled. Transfer to a large bowl and add the melted butter. Mix until throughly combined. Add the mixture to an 9-inch pan and press against the bottom and sides of the pan, using the back of a spoon or a measuring cup. Place in the freezer until ready to use.

To make the filling simply heat the heavy cream without allowing it to come to a boil. Remove from heat and pour over the dark chocolate. Let it sit for a minute before stirring. Add the butter and Lifeway Chocolate Truffle Lowfat Kefir to the mixture and stir until fully combined, and smooth. Pour over the chilled graham cracker crust. Smooth the top using with an angled spatula or the back of a spoon. Refrigerate for at least 4 hours, or preferably overnight.

How to make a Marshmallowy Meringue Topping

The most important tip here is to make sure your egg whites are room temperature. I prefer separating the eggs while cold, and then allowing them to come to room temperature before whisking.

Then, beat the egg whites and sugar until combined.  Place the bowl over a small saucepan on simmering water. Cook for 2-3 minutes, until the sugar dissolves, whisking constantly. Return the bowl to the stand mixer, and beat at medium-high speed until stiff peaks form. About 5-8 minutes.
Spread the meringue on top. Use a small offset spatula to achieve swoops and swirls. You can brown the meringue in the oven, but for more control and prettier results use a kitchen torch.

Ingredients

For the Graham Cracker Crust:

  • 27 graham crackers, crumbled
  • 8 tbsp (1 stick) unsalted butter, melted
  • 1/4 tsp kosher salt

For the Chocolate Filling:

For the Marshmallow Meringue Topping:

  • 5 egg whites, room temperature
  • 1 cup granulated sugar
  • 1/2 tsp cream of tartar
  • 1/3 cup water
  • 1 tsp vanilla

Instructions

For the Graham Cracker Crust:

  1. Place graham crackers in a food processor and pulse until finely crumbled. Transfer to a large bowl and add the melted butter. Mix until throughly combined. Mixture should resemble wet sand and should stick together, if it’s too dry add more melted butter. If it’s to wet, add more graham crackers!
  2. Add the mixture to an 9-inch pan and press against the bottom and sides of the pan, using the back of a spoon or a measuring cup. Place in the freezer until ready to use.

For the Chocolate Filling:

  1. Chop the semisweet chocolate and place in a large bowl. Set aside.
  2. In a small saucepan over medium-low heat, heat the heavy cream without allowing it to come to a boil. Remove from heat and pour over the chocolate. Let it sit for a minute before stirring.
  3. Add the butter and Lifeway Chocolate Truffle Lowfat Kefir to the mixture and stir until fully combined, and smooth.
  4. Pour over the chilled graham cracker crust. Smooth the top using with an angled spatula or the back of a spoon. Refrigerate for at least 4 hours, or preferably overnight.

For the Marshmallow Meringue Topping:

  1. In the bowl of a stand mixer fitted with the whisk attachment, beat the egg whites and sugar until combined.
  2. Place the bowl over a small saucepan on simmering water. Cook for 2-3 minutes, until sugar dissolves, whisking constantly. Return the bowl to the stand mixer, add the remaining ingredients and beat at medium-high speed until stiff peaks form. About 5-8 minutes.
  3. Spread the meringue on top. Use a small offset spatula to achieve swoops and swirls. You can brown the meringue in the oven, but for more control and prettier results use a kitchen torch.
  4. Slice and serve!
