Spring Greens Burrata Pizza

Spring Greens Burrata Pizza with fried eggs and arugula, for those weeknights when you’re craving carbs but also trying to be healthy and eat a salad. This homemade pizza dough has the best crust I’ve ever made, it’s crispy and golden, and well, thiqq.
I used Sur La Table’s Perfect Pizza Flour Blend, it literally can be done in 15 minutes. What I loved about it is that it’s pretty straight forward and the dough is very easy to roll out. If you’ve ever bought pre-made pizza dough, you know what I’m talking about. They always stick and end up tasting flour-y. With this blend, it was the exact opposite.
Tips for the best Pizza crust
Another great tip I have for perfect pizza dough is to use a Baking Steel. I used Sur La Table’s and I’m hooked. The crust was crispy on the edges and perfectly cooked, and it didn’t burn the flip side (which always happens to me).
What I love about this pizza is that it makes me feel like Spring is here. With Daylight Savings Time and nicer weather, I’m so ready for all the beautiful greens and produce we get here in California.
I’m also loving the fresh burrata with the fried eggs. I actually usually prefer my eggs cooked over medium, but in this case it made the dough a little soggy. So, on my second recipe test I went for fried and cooked almost all the way and loved it!

Spring Greens Burrata Pizza

Description
Fresh homemade pizza topped with basil pesto, and baked until crisp. Top with burrata cheese, fried eggs and fresh spring greens.
Ingredients
- 1 ball of pizza dough, store bought or homemade*
- 1/2 cup basil pesto, store bought
- 2 eggs
- 8oz Burrata cheese
- 1 cup arugula
- 1/4 cup micro greens
- Handful mini heirloom tomatoes
- 1/4 cup red onion
- 1/4 cup sugar snap peas
- Salt and Pepper, to taste
- Drizzle of Olive Oil
Instructions
For the crust:
- Preheat your oven to 425F.
- Follow the instructions on the pizza dough package. Combine all ingredients, mix & knead.
- Using a rolling pin, roll dough out to desired size and thickness. Transfer to baking steel.
- Spread pesto all over the dough. Cook for 8-10 minutes (time varies depending on size and thickness).
Toppings
- Add the eggs on top and cook for another 2-3 minutes, until the whites are cooked and the crust is golden.
- While the pizza cools a bit, toss the topping ingredients with olive oil, salt and pepper (to taste).
- Top pizza with burrata, arugula, micro greens, tomatoes, red onions and snap peas.
- Serve and enjoy!
