If there’s one thing I’m addicted to is chocolate. Something in me craves it every.single.day! Most of the time a square of 80% dark chocolate does the trick, but sometimes I need the joy that comes with baking something from scratch!

These brownies are incredibly delicious and only take about 30 minutes to make. The ingredients are simple, too: coconut oil, brown sugar, eggs, cocoa powder, baking powder, vanilla, gluten free chocolate chunks and gluten free flour.

HOW TO MAKE GLUTEN FREE BROWNIES

This recipe is pretty easy to follow and you only need one bowl! Whether you’re gluten and dairy intolerant or simply prefer a cleaner dessert, you won’t be able to tell the difference with these brownies. You might have to run to the store to get a couple of ingredients, though. Here are my suggestions:

  • Start with a good gluten free flour made for baking: my go-to is Bob’s Red Mill Gluten Free 1-1 Baking Flour. This flour never fails and it’s available at most grocery stores.
  • Get good quality coconut oil. Although you could technically use vegetable oil, the taste and texture might change, plus we’re trying to keep things clean here. This is my favorite brand.
  • Chocolate: good clean chocolate can be hard to find sometimes, that’s why I always go for Enjoy Life chocolate chunks. Chocolate chips work too, just make sure you’re getting the gf and df version.

Combine all ingredients in a large bowl, and mix until fully incorporated. Transfer to a greased and lined 8×8 cake pan, and bake for about 30 minutes. That’s it! So simple and delicious.

Oh! And if you’re feeling a bit extra, serve straight out of the oven and add a scoop of vanilla or coconut ice cream. YUM!

Description

The fudgiest and most delicious gluten and dairy free brownies ever. This one-bowl recipe is super easy to make and takes about 30 minutes.

Ingredients

  • 2 cups gluten free flour
  • 3/4 cup cocoa powder, sifted
  • 2 cups brown sugar, I prefer using light
  • 1/4 tsp baking powder
  • 1/4 cup coconut oil, melted
  • 1 1/2 cup nut milk, I used almond milk
  • Pinch of sea salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chunks

Instructions

  1. Preheat oven at 350F. Grease and line 8×8 cake pan with parchment paper.
  2. In a large bowl, add the flour, brown sugar, sea salt, baking powder and cocoa powder, and whisk until combined.
  3. In a separate bowl, combine nut milk, egg, vanilla extract and coconut oil and stir.
  4. Pour the wet ingredients into the dry ingredients and stir using a spatula, until you can’t see any flour.
  5. Fold in chocolate chunks.
  6. Transfer to prepared pan and sprinkle extra chocolate chunks on top (optional).
  7. Bake for 30-35 minutes until edges start to pull away from the sides.
  8. Remove from oven and let cool for 15 minutes before removing from pan. The center is meant to be very fudgy!
  9. Store in an airtight container for up to 3 days. Refrigerate to keep longer.
