It happened again… Summer went by so fast I didn’t even notice – but I’m not mad about it. I have to admit it’s not my favorite season! But Fall… Fall is my jam. Everything from the produce and baked goods to warming soups and lattes (and let’s not forget everything at Zara), I look forward to this season every year.
So this year I’m embracing it fully, starting with Pumpkin Spice Baked Donuts. I’m not a PSL kind of person, but I do enjoy some pumpkin treats like this one. It’s usually a hit or miss when it comes to adding pumpkin to baked goods, but I’m confident you’re going to love these. They come together in no time and with a few tweaks, you can make it a healthy weekend breakfast.

Now onto the details! Most of the ingredients you’ll probably already have at home. You can easily swap the gf flour for regular flour and the nut milk for regular milk. One thing to keep in mind is to avoid overmixing the batter. so mix until the ingredients are combined and pipe right away!

Description
These Pumpkin Spice Baked Donuts are a perfect way to start your day or cozy up on your couch with some tea and a nice book, and get your hygge on.
Ingredients
Wet Ingredients
- 3 eggs
- 1 can organic pumpkin puree
- 4 tbsp unsalted butter (melted)
- 2 tbsp vanilla
- 3 tbsp nut milk
Dry Ingredients
- 2 cups gluten free flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 1/2 tsp pumpkin spice
- 1/4 tsp cardamom
- 1 tsp salt
Cinnamon Sugar Topping (optional)
- 1 cup sugar
- 2 tbsp cinnamon
Instructions
- Preheat the oven to 325F and lightly grease a donut pan.
- In a large bowl, combine dry ingredients: flour, sugar, brown sugar, pumpkin spice, cardamom, baking powder, baking powder and salt
- Add the wet ingredients into the dry ingredients and mix by hand until combined. Batter will be thick.
- Add the mixture to a large piping bag and pipe the batter into the donut pan.
- Bake for 10-12 minutes until the dough springs back when touched.
- Remove from oven and allow to cool in the pan for 5 minutes. Transfer to a cooling rack and bake the remaining batter.
- Brush the donut with melted butter and dip both sides into the cinnamon and sugar mixture.
- Serve with coffee or tea and enjoy!
