How to Make a Dulce de Leche Crepe Cake

A Dulce de Leche Crepe Cake is made with store bought (or homemade) large crepes, stacked on top of each other. Bottom layers are filled with dulce de leche, and the top half layers with fresh whipped cream.

Dulce de leche can be a bit sweet on its own, so pairing it with fresh whipped cream gives it the perfect amount of sweetness and delicacy. I like to think of this dessert as the perfect blend of French meets Hispanic dessert.

To make this Crepe Cake you’re going to need:

  • 20 Crepes, store-bought or homemade
  • Dulce de Leche, store-bought or homemade
  • Fresh Whipped Cream, not from a can
  • An 8 or 9-inch cake mold
  • Knife
  • Angled spatula or spoon

Tips to Make a Dulce de Leche Crepe Cake

Don’t be intimidated by this dessert, it is super simple and requires very basic baking skills.

  • Start with the crepes. I prefer using store-bought crepes, but if you’re making them, make sure you use a 9-10inch pan.
  • Use a round 8 or 9-inch cake mold to cut around the crepes so you get an even stack. Simply, place a crepe on a large surface, place the base of the mold on top and run a knife around the crepe a couple of times. Discard the scraps. This process takes a little bit of time but is worth it!
  • If making your own Dulce de Leche, I’d suggest making it the day before. Here’s an easy step-by-step tutorial, it only requires 1 ingredient. When using store bought Dulce de Leche, I like to heat it up for a few seconds in the microwave so that it is easy to spread.
  • Make the whipped cream as directed in the recipe card below. I’d suggest cutting all your crepes before making the whip cream.
  • Place 1 crepe on a cake stand, top with dulce de leche and spread using an angled spatula or the back of a spoon. Repeat the process 10 times.
  • Switch to layering with fresh whipped cream for the remaining 10 crepes.
  • Top with whipped cream and drizzle with remaining dulce de leche.
  • Serve immediately.

What is Dulce de Leche?

Dulce de Leche is a popular confection from Latin America made from milk and sugar, or sweetened condensed milk. It’s similar to caramel and used in many hispanic desserts, especially ones from Argentina. It has a sweet golden-brown color with deeply decadent flavor.

Ingredients

  • 20 store bought french crepes
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 3/4 cup dulce de leche
  • 1/4 tsp salt
  • 2 cups heavy cream, chilled
  • 2 cups powdered sugar, sifted
  • 1/4 tsp cream of tartar

Instructions

  1. In the bowl of a stand mixer with the paddle, beat the softened butter on medium until smooth. reduce to low and add powdered sugar, gradually. add dulce de leche and salt, and beat until combined.
  2. Place 1 crepe on a plate and spread enough dulce to cover the top. repeat the process until you’ve used all the dulce frosting (about 10 layers).
  3. In the bowl of the mixer with the whisk, on high, beat cold cream until smooth. Add powdered sugar and cream of tartar, until soft peaks form. spoon and spread on remaining 10 layers of crepe. finish off with a thicker layer of whipped cream and drizzle dulce de leche on top!
