Double Chocolate Brownie Cookies

These double chocolate brownie cookies are the perfect blend of a chewy brownie meets crispy chocolate cookie with melted chocolate bits.

These Double Chocolate Brownie Cookies are very similar to my Peanut Butter Brownie Sandwich Cookies. These new version has extra chocolate on top and are a little chewier on the inside and crispy on the outside!

How to make Brownie Cookies

These Double Chocolate Brownie Cookies are super easy to make and come together in under 30 minutes. For this recipe you’re going to need:

  • Dark chocolate, I used 70%
  • Unsalted butter
  • Powdered sugar
  • Light brown sugar
  • Eggs
  • Baking powder
  • Kosher salt
  • All purpose Flour
  • Vanilla extract
  • Dark cocoa powder

First melt the butter and chocolate over low heat. In a bowl of a stand mixer, whisk the eggs, brown sugar and vanilla until creamy, about 5 minutes. In a separate bowl, sift the flour, powdered sugar, baking powder and cocoa powder. Add to the egg mix and stir until combined. Fold in the melted chocolate. Chill for 15 minutes.

Spoon onto baking sheet lined with parchment paper. Bake at 350F for 10-12 minutes. Enjoy!

Description

These double chocolate brownie cookies are the perfect blend of a chewy brownie meets crispy chocolate cookie with melted chocolate bits.


Ingredients

  • 315 gr dark chocolate, finely chopped

  • 1/4 cup unsalted butter

  • 1 1/4 cup light brown sugar

  • 1 tsp vanilla

  • 2 eggs

  • 1/2 tsp baking powder

  • 1/4 tsp kosher salt

  • 2/3 cup all purpose flour

  • 2/3 cup powdered sugar

  • 1 tbsp dark cocoa powder


Instructions

  1. Preheat the oven to 350F. Line a baking sheet with parchment paper.

  2. In a small saucepan over low heat, melt the butter and 300gr of chocolate, stirring until smooth. Set aside.

  3. In the bowl of a stand mixer with the whisk attachment, whisk the eggs, brown sugar and vanilla until creamy, about 5 minutes

  4. In a separate bowl, sift the flour, powdered sugar, baking powder and cocoa powder. And add to the egg mixture, stir until combined. Folding in the melted chocolate mixture.

  5. Chill for 15 minutes.

  6. With a small cookie or spoon, spoon dough onto prepared sheet. Slightly flatten the tops by pressing down with your fingers. I like to add the remaining chopped chocolate (15gr) on top.

  7. Bake for 10-12minutes, until the tops crackle. Allow to cool completely
