Sunday brunch anyone? This is probably one of the best spreads out there. The Ultima Avocado Toast Brunch Board is perfect for entertaining friends; it has a little something for everyone. Featuring a variety of toppings, you can pick and choose how you make your own avo toast – my favorite? avo mash, jammy eggs, bacon and chives on sourdough!

Here, I’ll share tips on how to make this board and avo topping ideas to get you started!

How to make your own avo toast board

For this spread, you’re going to need a whole lot of toppings, so make sure to save/print the recipe card below and head to the store.

Let’s start with the bread. Since it’s the base of your toast, it needs to be a great one! Head to your local bakery and ask for whole wheat sourdough, seriously. It’s the best!

Next, make your own jammy eggs. So easy! Drop the eggs in boiling water and cook for 6 minutes, then transfer to a bowl of ice water for 2 minutes. Crack and peel!

Have a variety of fruits, produce/greens and garnishes. Here’s what I used:

  • Watermelon radishes, and regular radished
  • Cucumber ribbons
  • Tomatoes
  • Red onion
  • Figs, blackberries, pomegranate arils, lemon slices
  • Lox
  • Feta or goat cheese
  • Garnishes such as: chili flakes, everything but the bagel seasoning, chives, capers, dill, salt and pepper

Note: feel free to swap ingredients for ones you like best, or if there’s one you can’t find. Remember this is just a guide to inspire you to create your own!

Make your own Avo Toast

Topping Ideas

  1. First, toast the sourdough to your liking. Drizzle some olive oil and place 1/2 an avocado on top. Mash and spread into the bread using a fork, keeping it as chunky as possible.
  2. Sprinkle salt and pepper and squeeze a bit of lime on top.
  3. See picture #2 and #3 for ideas:
    1. Follow steps 1 and 2, top with sliced figs.
    2. Follow steps 1 and 2, top with lox and cucumber ribbon. Garnish with dill and capers.
    3. Follow steps 1 and 2, top with feta or goat cheese, and pomegranate arils. Garnish with chives.
    4. Follow steps 1 and 2, top with radishes and cucumber ribbons.
    5. Follow steps 1 and 2, top with jammy eggs, onions, bacon and chives (my favorite!)

Note: if you prefer to make the avo mash ahead of time, mash the avocados in a bowl, leaving some chunks. Squeeze the lime, and add salt and pepper to taste. It will start browning after 20-30 minutes, so keep that in mind!

Ingredients

For the board

Fuits

  • Figs, sub for strawberries if not available
  • Blackberries
  • Pomegranate seeds
  • Lemon slices
  • Cherries

Protein

  • 6 jammy eggs
  • Bacon slices
  • Lox

Cheese

  • Feta or crumbled goat cheese
  • Watermelon radishes, or regular
  • Whole wheat sourdough bread, sliced

Veggies

  • Cucumber ribbons
  • Watermelon radishes, sliced
  • Radishes, sliced
  • Red onions, diced or sliced

Optional Garnishes

  • Dill
  • Capers
  • Chives
  • Chilli Flakes
  • Everything but the bagel seasoning
  • Maldon salt flakes
  • Black pepper

Drinks

  • Orange juice, freshly squeezed

For the Avo mash

  • 34 ripe avocados, halved, pit removed
  • Extra virgin Olive oil
  • Salt & Pepper, to tast
  • 1 lime

Instructions

To Make Jammy Eggs

  1. In a large saucepan, bring water to a boil. Drop each egg slowly, one at a time, using a big spoon or ladle.
  2. Cook over medium-low heat for 6 minutes.
  3. Transfer eggs to a bowl of ice water and chill for a couple of minutes.
  4. Crack, peel and serve.

To assemble the board

  1. Use a large, 20-inch, wood board. Arrange 3 small bowls in a triangular shape; one for the pomegranate, one for feta or goat cheese, and one for the avocado mash.
  2. Place the toasted sourdough first – (or keep it fresh so guest toast to their liking). Place the eggs on the opposite side of the board, and the bacon next to them.
  3. Now, place the lox around one of the bowls and the cucumber ribbons on the side of another bowl, covering just about half. Fill in the space between the bowls with figs (or strawberries).
  4. Decorate one side with lemon slices and the other with the radishes.
  5. Fill remaining holes with the tomatoes, dill and blackberries, trying to break up similar colors.
  6. Place the garnished on small plates around the bowl, and remaining bread slices in a basket.
