It’s National Piña Colada Day! And what better way to celebrate and enjoy a hot summer day than with a homemade Pina Colada.
It had been quite some time since I had had a pina colada, and let me tell you… I’ve been missing out! This cocktail recipe is insanely delicious. A perfect balance of sweetness and just enough white rum to make me feel young again LOL.
As you know, I enjoy taking things a step further so instead of cutting my pineapple and throwing away what I didn’t need, I made a quick pineapple cup. I think it’ll make you feel like you’re in Aruba (my favorite island) lounging by the pool!
How to make a pineapple cup
Making a pineapple cup is super easy to do and it’s perfect for summer gatherings by the pool. Place the pineapple on its side and using a serrated knife, cut off the top of the pineapple. You can use a pineapple corer to remove the core, or scoop it out using a cookie scoop or spoon.
Follow the instructions below to make the most delicious Pina Colada ever, and pour it into your pineapple cup! ENJOY!

Description
The most refreshing summer cocktail made with fresh pineapple, coconut cream and rum. Serve in a pineapple cup and enjoy!
Ingredients
- 1 can unsweetened coconut milk
- 1 cup sugar
- 1/8 tsp salt
- 1 fresh pineapple, peeled and cut into pieces
- Juice of 1 lime
- 1/4 cup coconut cream, chilled, use the solid part only
- 2 oz white rum, optional
- 4 cups ice
Instructions
- Combine coconut milk, sugar and salt in a blender, and blend until smooth.
- Add the remaining ingredients; pineapple, lime juice, coconut cream and rum if using. Blend until combined.
- Add ice and blend again until mixture has a slushy consistency.
- Serve and top with hibiscus flowers, pitted cherries or maraschino.
