How to make Gooey Almond Butter Cookie Bars
What I love about this recipe is that you can make it one bowl and bake in one pan. No fuss, no mess is my kind of recipe! The ingredients are basic pantry items with the exception of whole wheat flour. Using whole wheat flour gives this recipe a denser body, so it doesn’t fall apart from all the gooeyness. If you want to learn more about baking with whole wheat flour, this is a great resource.
The light brown sugar and eggs in this recipe helps give it a nice chew. Butter gives it an extra rich flavor and a tender texture – I like to use European style butter that has 85% butterfat.
Almond butter takes them up a notch, making these bars soft and nutty!
And of course, chocolate! Went for chocolate chunks, with a few larger chopped chocolate pieces for that melt-in-your-mouth result.
Best Almond Butter for Baking Cookie Bars
Almond butter is a great ingredient to include in baked goods. It’s high fat content and high protein helps give these bars structure. Plus, it’s so delicious.
Picking the right nut butter can be tricky, there are many varieties, textures and added (sometimes unnecessary) ingredients in store-bought jars. My go-to for these Almond Butter Chocolate Chunk Cookie Bars is the unsalted, natural, drippy kind that separates. Make sure to stir before measuring and adding to the recipe.
I usually get mine from Trader Joe’s or any local grocery store.
Best Chocolate for Baking Almond Butter Chocolate Chunk Cookie Bars
I love dark chocolate anything! It works really well on baked goods, it’s slight bitterness balances the sweetness from batters and gives it a nice and sophisticated kick. For this recipe, I used dark, semi-sweetened chocolate chunks with at least 72% cacao. You can use chocolate chips or a chopped chocolate bar, as well.
