These Almond Butter Chocolate Chunk Cookie Bars are insanely delicious, perfectly sweet, and extra gooey. As if that didn’t make you drool, they also feature puddles of melted chocolate and a touch of sea salt. Plus, they come together really quick! Go ahead and make a batch for the week.

What I love about this recipe is that you can make it one bowl and bake in one pan. No fuss, no mess is my kind of recipe! The ingredients are basic pantry items with the exception of whole wheat flour. Using whole wheat flour gives this recipe a denser body, so it doesn’t fall apart from all the gooeyness. The light brown sugar and eggs in this recipe helps give it a nice chew. Butter gives it an extra rich flavor and a tender texture – I like to use European style butter that has 85% butterfat.

Almond butter takes them up a notch, making these bars soft and nutty!

And of course, chocolate! Went for chocolate chunks, with a few larger chopped chocolate pieces for that melt-in-your-mouth result.

These gooey almond butter chocolate chunk cookie bars are easy to make and absolutely delicious! Made with a few ingredients and ready in less than 30 minutes!


Ingredients

  • 10 tbsp unsalted butter, room temperature
  • 1 cup light brown sugar, packed
  • 1 cup all purpose flour
  • 1 cup whole wheat flour, sub for 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 2 large eggs, room temperature
  • 1/2 cup almond butter
  • 2 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1 1/2 cups chocolate chips
  • 3 oz dark chocolate, chopped

Instructions

  1. Preheat oven at 350ºF. Grease and line a 9×13″ pan with parchment paper.
  2. In the bowl of a stand mixer with the paddle attachment, beat the room temp butter and light brown sugar until creamy and fluffy. Add the eggs and vanilla and beat until incorporated.
  3. In a separate bowl, combine the dry ingredients; ap flour, whole wheat flour, baking soda and salt. Add to the wet mixture and mix until combined.
  4. Fold in the chocolate chips and transfer to prepared pan. Arrange the chopped chocolate on top.
  5. Bake for 18-20 minutes until toothpick comes out clean, you’re looking for a light golden top.
